Einkorn Wheat Pumpkin Bread

Einkorn is an ancient grain, the oldest variety of wheat, which has never been processed through hybridization or selective breeding. The grain of today is very much like the grain of a thousand years ago. It has gone untouched by modern intensive breeding; therefore, it is healthier for you. Einkorn is a pure variety of wheat berry with less gluten and more nutrition and protein than traditional whole wheat making it easier on your digestive system. One cup of whole grain wheat flour contains about 87 carbohydrates, while one cup of Einkorn is about 51 carbs. It doesn’t spike the blood sugar as quickly as modern wheat.

Einkorn is very versatile in my book. I use it in sweet breads like this one, in cookies and sandwich breads and even biscuits. It is a soft, nutty flour perfect for baking. I love it with my sourdough breads too. If you want to use it more like an all-purpose flour, just sift the flour through a fine-mesh sleeve and what is left is the bran. Don’t throw it away, you can add it to your next bread recipe or to your favorite smoothie recipe. For this recipe, though, I did not remove the gran.

Side Note: If you use the Nutrimill Grain Mill to make your freshly ground flour, you do not need to wash the black air filter that is in the top. It will become gunky. all you need to do it knock out as much flour from it as you can, and it will be good to go for next time. Yes, I learned this the hard way!

Ingredients

  • 1 cup Einkorn wheat berries, grounded into about 2.5 cups flour(250 grams)

  • 3 large eggs

  • 1/2 cup locally sourced honey

  • 1/4 cup pure maple syrup (Can leave this off if you like a less sweet bread.)

  • 1/2 cup EVOO, avocado, melted coconut, or melted butter

  • 1 cup (230g) pumpkin purĂ©e, not pumpkin pie mix

  • 1-1/2 teaspoon cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon allspice

  • 1/4 teaspoon clove

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 2 tablespoons milk

Directions

  • Preheat oven to 350 degrees. Oil and flour a loaf pan.
  • In a large mixing bowl, combine all the ingredients. This is a very soft bread, so you can actually mix it all together with your plastic spatula. Mix for about two minutes to make sure it is all incorporated.
  • Pour batter into the loaf pan and bake for 50–55 minutes, or until a cake tester comes out clean.
  • Let cool for 10 minutes before turning out on a wire rack to cool. (If you do not do this, it will be okay to just leave it in your loaf pan to cool too.)
  • Slice and top with butter to serve. This bread freezes well too. Awesome add ins would be walnuts or chocolate chips.
